Ingredients
For the Pork Tenderloin
- 1½ pounds pork tenderloin
- ⅓ cup HapBee Tropical Persuasion Honey
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
For the Coconut-Lime Rice
- 1 cup jasmine rice
- 1 cup full-fat coconut milk
- ¾ cup water
- ½ teaspoon kosher salt
- 1 tablespoon fresh lime juice
- 1 teaspoon finely grated lime zest
- 2 tablespoons fresh cilantro, chopped
For Finishing
- 2 tablespoons HapBee Tropical Persuasion Honey
- Fresh cilantro
- Lime wedges
- Thinly sliced green onions, optional
- Toasted coconut flakes, optional
Directions
1. Prepare the glaze.
In a small bowl, whisk together the Tropical Persuasion Honey, soy sauce, lime juice, olive oil, garlic, ginger, smoked paprika, salt, and black pepper.
2. Season the pork.
Pat the pork tenderloin dry and place it in a shallow dish. Pour half of the honey mixture over the pork and turn until evenly coated. Reserve the remaining glaze for cooking.
3. Start the coconut rice.
Combine the jasmine rice, coconut milk, water, and salt in a medium saucepan. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for approximately 15 minutes or until the rice is tender and the liquid has been absorbed.
4. Sear the pork.
Preheat the oven to 400°F. Heat an oven-safe skillet over medium-high heat. Add the pork tenderloin and sear for approximately 2 minutes per side until lightly browned.
5. Glaze and roast.
Brush the pork generously with some of the reserved Tropical Persuasion glaze. Transfer the skillet to the oven and roast for approximately 15–20 minutes, or until the pork reaches an internal temperature of 145°F.
6. Finish the rice.
Remove the rice from the heat and let it rest, covered, for 5 minutes. Fluff with a fork, then stir in the lime juice, lime zest, and chopped cilantro.
7. Rest and serve.
Allow the pork to rest for 5–10 minutes before slicing. Serve over the coconut-lime rice and drizzle lightly with additional Tropical Persuasion Honey. Garnish with cilantro, lime wedges, green onions, or toasted coconut if desired.
HapBee Tip
For the best caramelized finish, brush the pork with an extra layer of Tropical Persuasion Honey during the final few minutes of roasting. Letting the pork rest before slicing will keep it juicy and allow the sweet-savory glaze to cling beautifully to every slice.
