Short Description

Juicy roasted chicken thighs are coated with garlic, ginger, fresh lemon, and HapBee Cold Buster Honey for an easy sweet-and-savory dinner packed with bright, warming flavor. Brushing the honey mixture on during the final minutes of roasting lets it caramelize over the chicken, creating a glossy golden crust while the ginger and citrus balance the natural sweetness.

Ingredients

For the Chicken

  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika

For the Cold Buster Honey Glaze

  • ⅓ cup HapBee Cold Buster Honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon freshly ground black pepper

For Finishing

  • Additional HapBee Cold Buster Honey, optional
  • Fresh parsley
  • Lemon wedges
  • Thinly sliced green onions, optional

Directions

1. Prepare the oven.
Preheat the oven to 425°F. Line a rimmed baking sheet or roasting pan with parchment paper or foil for easy cleanup.

2. Season the chicken.
Pat the chicken thighs completely dry with paper towels. Rub them with olive oil and season evenly with salt, black pepper, garlic powder, and smoked paprika.

3. Begin roasting.
Arrange the chicken skin-side up on the prepared pan. Roast for approximately 25 minutes.

4. Prepare the Cold Buster glaze.
While the chicken cooks, whisk together the Cold Buster Honey, lemon juice, lemon zest, soy sauce, garlic, ginger, Dijon mustard, and black pepper.

5. Glaze the chicken.
Remove the chicken from the oven and brush each thigh generously with the Cold Buster Honey glaze.

6. Finish roasting.
Return the chicken to the oven and continue roasting for approximately 10–15 minutes, brushing with another layer of glaze halfway through, until the chicken reaches an internal temperature of at least 165°F and the skin is deeply golden and caramelized.

7. Rest the chicken.
Allow the chicken to rest for about 5 minutes before serving.

8. Finish and serve.
Spoon any remaining pan juices over the chicken and garnish with fresh parsley, green onions, and lemon wedges. Add a very light drizzle of Cold Buster Honey just before serving if you want the flavor to stand out even more.

HapBee Tip

Add the Cold Buster Honey glaze toward the end of roasting rather than at the beginning. This gives the honey enough time to caramelize and create a beautiful sticky crust without burning. Serve with roasted potatoes, rice, or simple green vegetables for an easy weeknight dinner.
