Ingredients
For the Chicken
- 1½ pounds boneless, skinless chicken breasts, cut into 1½-inch pieces
- ⅓ cup HapBee Tropical Persuasion Honey
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon low-sodium soy sauce
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 8 wooden or metal skewers
For the Mango-Pineapple Salsa
- 1 cup fresh mango, diced
- 1 cup fresh pineapple, diced
- ½ cup fresh strawberries, diced
- ¼ cup red bell pepper, finely diced
- 2 tablespoons red onion, finely diced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- 2 tablespoons toasted unsweetened coconut flakes
- Pinch of salt
For Finishing
- 2 tablespoons HapBee Tropical Persuasion Honey
- Fresh cilantro
- Lime wedges
- Additional toasted coconut, optional
Directions
1. Prepare the marinade.
In a large bowl, whisk together the Tropical Persuasion Honey, olive oil, lime juice, soy sauce, garlic, smoked paprika, salt, and black pepper.
2. Marinate the chicken.
Add the chicken pieces and toss until evenly coated. Cover and refrigerate for approximately 30 minutes.
3. Prepare the salsa.
Combine the mango, pineapple, strawberries, red bell pepper, red onion, cilantro, lime juice, toasted coconut, and a pinch of salt. Gently toss and refrigerate until ready to serve.
4. Assemble the skewers.
If using wooden skewers, soak them in water for at least 20 minutes. Thread the marinated chicken pieces evenly onto the skewers.
5. Grill the chicken.
Preheat the grill to medium-high heat. Lightly oil the grates and grill the skewers for approximately 10–14 minutes, turning every few minutes, until nicely caramelized and the chicken reaches an internal temperature of 165°F.
6. Add the Tropical Persuasion glaze.
During the final 2–3 minutes of cooking, lightly brush the chicken with the additional 2 tablespoons of Tropical Persuasion Honey. Watch carefully because honey caramelizes quickly over high heat.
7. Serve.
Transfer the skewers to a serving platter and spoon the mango-pineapple salsa generously over the chicken. Garnish with fresh cilantro, toasted coconut, and lime wedges.
HapBee Tip
For an even deeper tropical flavor, serve the skewers over coconut rice or alongside grilled pineapple. A small finishing drizzle of Tropical Persuasion Honey just before serving adds an extra pop of sweet tropical flavor.
