Short Description

Creamy coconut-lime cheesecake meets the bright tropical sweetness of HapBee Tropical Persuasion Honey in these rich, silky dessert bars. A buttery graham cracker crust, tangy lime, toasted coconut, and a glossy honey finish make every bite sweet, citrusy, and irresistibly tropical.

Ingredients

For the Graham Cracker Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • Pinch of kosher salt

For the Coconut-Lime Cheesecake Filling

  • 16 ounces cream cheese, softened
  • ½ cup HapBee Tropical Persuasion Honey
  • ⅓ cup granulated sugar
  • 2 large eggs
  • ½ cup full-fat coconut milk
  • 2 tablespoons fresh lime juice
  • 1 tablespoon finely grated lime zest
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt

For Finishing

  • 2 tablespoons HapBee Tropical Persuasion Honey
  • ¼ cup toasted unsweetened coconut flakes
  • Fresh lime zest
  • Thin lime slices, optional

Directions

1. Prepare the oven and pan.
Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper, leaving enough overhang on the sides to lift the bars out after chilling.

2. Make the crust.
Combine the graham cracker crumbs, sugar, melted butter, and salt in a bowl. Stir until the crumbs are evenly moistened.

3. Bake the crust.
Press the mixture firmly and evenly into the bottom of the prepared pan. Bake for 8–10 minutes, then remove from the oven and allow it to cool slightly.

4. Prepare the cheesecake filling.
Beat the softened cream cheese and sugar until smooth and creamy. Add the Tropical Persuasion Honey and mix until incorporated.

5. Add the remaining ingredients.
Beat in the eggs one at a time, mixing only until combined. Add the coconut milk, lime juice, lime zest, vanilla, and salt. Mix until smooth.

6. Bake the cheesecake.
Pour the filling over the prepared crust and smooth the top. Bake for 25–30 minutes, or until the edges are set and the center still has a slight jiggle.

7. Cool and chill.
Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 3 hours or until thoroughly chilled and firm.

8. Finish and serve.
Lift the cheesecake from the pan and cut into 12 bars. Lightly drizzle with Tropical Persuasion Honey and finish with toasted coconut and fresh lime zest.

HapBee Tip

For the cleanest slices, chill the cheesecake completely and wipe your knife between each cut. Add the final Tropical Persuasion Honey drizzle just before serving so the honey stays glossy and beautifully visible.
