Short Description

Creamy chia pudding gets a bright berry upgrade with HapBee Berry Licious Honey and a colorful mix of strawberries, blueberries, raspberries, and blackberries. Naturally sweet, easy to prepare, and perfect for making ahead, this refreshing recipe works beautifully for breakfast, an afternoon snack, or a light dessert.

Ingredients

For the Chia Pudding

  • ½ cup chia seeds
  • 2 cups unsweetened almond milk, coconut milk, or milk of choice
  • 3 tablespoons HapBee Berry Licious Honey
  • ½ teaspoon vanilla extract
  • Pinch of kosher salt

For the Mixed Berry Topping

  • ½ cup fresh strawberries, sliced
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ cup fresh blackberries
  • 1 tablespoon HapBee Berry Licious Honey
  • 1 teaspoon fresh lemon juice

For Finishing

  • Additional HapBee Berry Licious Honey
  • Fresh mixed berries
  • Sliced almonds or granola, optional
  • Fresh mint, optional

Directions

1. Prepare the chia pudding.
In a medium bowl or large jar, whisk together the chia seeds, milk, Berry Licious Honey, vanilla extract, and salt until well combined.

2. Prevent clumping.
Allow the mixture to sit for about 5 minutes, then whisk or stir again thoroughly to break up any chia seed clusters.

3. Chill the pudding.
Cover and refrigerate for at least 4 hours or overnight, until the mixture becomes thick and creamy.

4. Prepare the berries.
In a small bowl, gently combine the strawberries, blueberries, raspberries, and blackberries with 1 tablespoon of Berry Licious Honey and the lemon juice.

5. Assemble.
Divide the chilled chia pudding between two glasses, jars, or bowls. Spoon the mixed berry topping generously over each serving.

6. Finish and serve.
Drizzle lightly with additional Berry Licious Honey and garnish with fresh berries, sliced almonds, granola, or mint if desired.

HapBee Tip

Prepare the chia pudding the night before for an effortless grab-and-go breakfast. For an extra-creamy texture, stir in a spoonful of Greek yogurt before serving, then finish with a small drizzle of Berry Licious Honey.
